Ingredients:
- 1 kg oxtail, cut into small pieces and washed thoroughly

- 8 shallots, peeled
- 5 cloves garlic, peeled.
- 1/4 tsp nutmeg powder
- 1/4 tsp ground white pepper
- 2 cloves
- 1 cinnamon stick
- Salt to taste

Instructions:
1. Boil oxtails and water in a soup pot, then simmer until the meat is tender. This usually takes about 2 hours. If you have a pressure cooker, you can reduce the cooking time considerably to a mere 30 minutes.
2. In a frying pan, heat oil and sauté spice paste, cinnamon stick, cloves, and nutmeg until fragrant. About 5 minutes.
3. Add the spice paste to the soup pot.
4. Bring the oxtail and broth back to a boil.
5. Add potatoes, carrots, spring onions, and tomato to the soup pot.
6. Simmer until the vegetables are cooked through.
7. Season with salt and white pepper.
